Eggplant and Tofu Pad Thai. I wasn't confident that I could make thai sauce, but using Pad Thai recipes from allrecipes.com as inspiration and the ingredients I had on hand I managed to come up with something pretty close - and delicious. For the sauce I used equal parts sugar, rice wine vinegar and soysauce I added in katchup, lime juice and minced ginger, and japanese red spice mix to taste.
